A collaborative effort between Chef David Bouley and Japan’s Tsuji Culinary Institute, Brushstroke presents an inspired modern adaptation of Kyoto’s kaiseki cuisine; seasonally focused tasting & A la carte menus that change throughout the year. Lunch and Dinner is available

Our menus offered in the main dining room showcase a wide range of Japanese cuisine; from the delicate use of vegetables to sashimi, rice and wagyu. Options include Chef Yamada’s 8 Course Kaiseki menu starting at $135 per person and a 8 Course Vegetarian Tasting menu starting at $120 per person, and an A la carte menu. The Kaiseki Restaurant features sashimi but not sushi.

Sushi is offered exclusively with Ichimura at Brushstroke where Chef Eiji Ichimura showcases an Omakase menu, starting at $195 per person.
